Snacking with a clear conscience

Markus Sorg, head chef at Park Igls Medical Spa Resort, has once again created healthy Advent biscuits this year. We wish our guests & readers a peaceful Christmas season and look forward to your visit!

All ingredients at a glance

Recipe for approx. 20 biscuits

  • 50 g rolled oats
  • 50 g coconut flakes
  • 20 g butter
  • 25 g granulated sugar
  • 150 ml soya milk
  • Grated peel of one orange
  • 1 egg

Step by step to biscuit heaven

Preparation

Fry the oats and coconut flakes in a pan until golden brown. Add the butter and caramelise with the granulated sugar. Deglaze with soya milk and simmer until the mixture separates from the pan. Add the grated orange zest and leave to cool. Stir the yolks into the cold mixture. Whisk the egg whites and carefully fold in. Pour into a piping bag and pipe small florets onto a baking tray. Sprinkle with oat flakes and bake at 180°C for 15 minutes.
